Chablis Les Preuses AOC - Domaine Chanson
After a long winter, the spring was rainy, and the heat arrived in July, also bringing with it violent hailstorms, which fortunately did not affect the harvest too much. The harvest took place under a bright sun at the end of September, from which the Chablis of the Domaine Chanson was born, of great aromatic purity and full of a beautiful and fresh tension. It was left to mature for ten months in oak barrels. It is strong, linear and pleasantly persistent.

Tasting Notes: Pale gold in color, it has good structure and intensity. A wine ready to be enjoyed but with qualities that allow it to evolve and refine over time if correctly stored. Floral aromas emerge on the nose mixed with aromas of white fruit and honey. It stands out for its delicate minerality and a well-balanced and complex sip. Creamy and with a long finish.
Pairings: Ideal to pair with smoked and grilled fish dishes, white meats and mature cheeses. Also excellent with mushroom risotto.
The Cellar: During the reign of Louis century. More than two centuries later, the Maison currently has a wine-growing property of around seventy hectares, spread across the best areas classified as "premier cru", both in Beaune and in Savigny and Pernand Vergelesses. Since 1999, the Chanson company has belonged to the Bollinger Champagne group which pursues a policy aimed at obtaining the highest quality in each wine, making use of a large team of experts, capable of making the most of the best terroirs of Burgundy and the grapes from here from. Between the rows, there is always constant and maximum respect for the balance of the environment, nature and ecosystem, and the agronomic standards followed which dedicate careful and obsessive care to each plant; the grapes that are harvested are valuable, pure and concentrated in every single nuance. In the cellar, by scrupulously controlling every production step, the main objective is never lost sight of, aimed at enhancing everything that the season and the territory have been capable of expressing in the fruit. The bottles that refer to the Domaine Chanson are synonymous with the highest oenological excellence of Burgundy and beyond. Wines, those that come out of the cellar founded by Simon Verry, capable of conquering from the first sip, and capable of giving emotions that few other wines are able to offer.
