Vinification in the pure tradition of Champagne, in thermoregulated stainless steel vats and vinification in wood for 18.6% of the wine. Partial blockage of malolactic fermentation. Before bottling, 13% of red wine obtained from grapes from the Maison's vineyard is incorporated. Ideal as an aperitif or at the table with light and natural cuisine based on noble fish and white meats. «Animated by the usual finesse of the Valle dell'Arce territory, the Cuvée Audace reveals a well-established character and its own identity which are given to it by the organic cultivation method. Bold is the expression of a classic and fresh year, with extra tension and good guard potential. Tasting Notes: Light yellow with some coppery reflections, beautiful effervescence composed of fine and lively bubbles. Expressive, very open, fresh, pure, crystalline and complex, white fruit, yellow fruit, white flowers, mineral and some spicy, toasted and woody notes. Taste Precise, fine, slender, with great freshness, good persistence, clean, light mouthfeel and good drinkability.
 
Pairings: Wonderful with a fish tartare and mature cheeses.
