Chassagne Montrachet Les Chenevottes AOC - Domaine Chanson
Made from rigorously selected chardonnay grapes from the vineyard of the same name, this astonishing Chassagne-Montrachet 1er Cru AOC Les Chenevottes. The plots are harvested separately on the basis of their optimal stage of ripeness and vinified in dedicated wooden barrels. Blending is followed by ageing in Burgundy oak barrels, 30% of which are new, and the wine is then bottled without filtering. It always manages to excite and surprise the taster, particularly as the years go by for the incredible complexity that it succeeds in scanning the glass.

Tasting Notes: Intense golden yellow capable of illuminating the glass. Complex and refined on the nose with fruity scents of apricot and candied citron blending with hawthorn and lime, sweet tobacco and oriental spices. Fresh and juicy, it rests on a solid savoury base and lengthens beyond the ordinary, offering elegant aromatic suggestions.
Pairing: A special wine to pair with elaborate shellfish and white meat recipes.
The Winery: During the reign of Louis XV, around 1750, Simon Verry founded the winery now known as Domaine Chanson Père et Fils, one of the first Burgundy wineries to give life to the wine trade, which was born in Beaune during the 18th century. More than two centuries later, the Maison currently has a vineyard property of around seventy hectares, spread over the best areas classified as 'premier cru', both in Beaune and in Savigny and Pernand Vergelesses. Since 1999, the Chanson company has belonged to the Bollinger Champagne group, which pursues a policy aimed at achieving the highest quality in each wine, using a large team of experts, capable of getting the most out of the best terroirs in Burgundy and the grapes from there. Between the rows of vines, the respect for the balance of the environment, nature and the ecosystem is always constant and maximum, and the agronomic rules followed devote careful and maniacal care to each plant; the grapes that are harvested are prized, forthright and concentrated in their every smallest nuance. In the cellar, scrupulously controlling each production step, we never lose sight of the main objective, which is to exalt all that the season and the terroir have been able to express in the fruit. The bottles that refer to Domaine Chanson are synonymous with the highest oenological excellence of Burgundy and beyond.
