Pecorino Brut sparkling wine - Cantina San Giacomo

Pure Pecorino grapes, a vine located in the hills of the province of Chieti. After the soft pressing of the grapes, harvested by hand in boxes, the must remains in contact with the skins for 24 hours at 5°C, favoring the dissolution of the varietal aromas. Fermentation in an autoclave generates the development of carbon dioxide which remains incorporated into the mass, producing the typical perlage in the secondary fermentation phase, which lasts approximately 85 days. During this period, secondary aromas develop which can be traced back to the work of the yeasts. Tartaric stabilization is then carried out by refrigerating it at a low temperature, followed by isobaric bottling. Fermentation in stainless steel tanks.

Tasting Notes: Pale straw yellow color with brilliant reflections. Fine-grained and persistent perlage. Intense and persistent bouquet, balsamic fragrances of sage and thyme combine with floral aromas of broom and acacia, a clear hint of bread crust. Fresh and full taste, with excellent minerality and rich acid structure. The liveliness and fragrance enhance its persistence. The retro-olfactory sensations confirm the organoleptic depth.

Pairings: Perfect as an aperitif, ideal with the typical dishes of Mediterranean seafood cuisine. Excellent with oysters, parmesan, medium and long-aged cheeses; exceptional end of the meal with strawberries.

The Cellar: Cantina San Giacomo is located between the sea of the Costa dei Trabocchi and the hills; a completely optimal setting for the perfect exposure of its vineyards and for the benefits that the sea brings to the quality of the wines. The aromatic fragrances of the full-bodied Reds and the delicate notes of the Whites come from the peculiarities of this territory. The winery's vineyards are located in the territory of Rocca San Giovanni and in the neighboring municipalities, in the province of Chieti. For years the winery has obtained the necessary certification to produce organic wine, the cultivation of which it has encouraged.
